Have you ever heard yourself say, "I can't eat healthy because my partner/spouse /family doesn't eat healthy." I sure have heard myself say that many times.
You know what - it's just an excuse! The photo to the right shows how two different meals with for two people with different nutritional needs - can still share a dinner prepared at home. Yes, this was our dinner tonight.
For starters - we typically have cheese, fruits and vegetables in the house. And for the most part I'll try to chop the vegetables every weekend so they are ready to cook during the week.
We love Mexican food, and I definitely enjoy it some nights. My husband was craving it tonight. He has a very active day job and even more physical work when he comes home working on beautifying our home so he needs more nutrients.. I work in an office job and am not as active as my husband, and don't need as much food to fill me up (especially tonight, I even skipped my rice!)
We broiled the steak. Sauteed the zuchinni.
In addition, I like eggplant so sauteed some of that too.
He fried up some tortillas.
The tortillas were filled with the steak and zucchini and topped with lettuce and cheese and hot sauce for his dinner. For my dinner, I tossed the steak, zucchini and eggplant in a bowl and added some tofu that was in the fridge and cut up already. Then I mixed in oyster sauce. We both enjoyed our dinner, and still prepared it together.
It may take some planning and preparation, but its possible. If we can do it, so can you!
